Preheat oven to 375°. Line a cookie sheet with parchment paper. Put dried fruit in a small bowl. Add amaretto and hot water and allow to sit for about 10 minutes. NOTE: If you want a more mochi-like interior, bake until breads barely get any color. If you want to have them on the drier side, bake a minute or 2 longer or until the breads catch a bit more golden color. Preheat the oven to 325 degrees F. Line a baking sheet with aluminum foil. Spread the walnuts out on the prepared baking sheet and roast for 5 minutes. “Well hello there! I’m Rachel and I really love food! Preheat the oven to 150°C. Butter and flour an 8-inch square pan.
In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.
Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes.
Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean.
When it's done, remove to a rack to cool.
